What is a Spectank?

A Spectank® is a food grade stainless steel soak tank which safely and efficiently removes baked-on fats and oils, commonly known as ”Black Carbon”, from kitchen and baking equipment soaked in it.

How often should Spectank be used?

The Spectank® operates 24/7. While items in heavy use should be cleaned every day, other items such as gas rings and filters may need less frequent cleaning. Based on your style of cooking, we will create a customer cleaning schedule to help maximise the benefit.

How often does the Spectank cleaning solution need refreshing?

CARBSOLVE®, our non-toxic, biodegradable cleaning powder, is designed to be reused continuously for a month. One of our friendly, trained technicians will visit monthly to take care of the draining, cleaning and replacing of the solution.

How long should items soak in the Spectank for?

Initial cleaning may require an overnight soak (or 48 hours for heavily carbonised items), but thereafter, some equipment will require 1 – 2 hours, while others will benefit from an overnight soak.

Does the Spectank kill bacteria?

Spectank® operates at 70 - 75°c. The World Health Organisation notes that viruses & bacteria are rapidly killed above 65°c

I don't think I have the space for a Spectank?

Spectank® is available in a variety of sizes, so there's one to fit every size operation. We know space is often at a premium, but we have great experience in finding convenient locations for a Spectank® in some of the tightest kitchens around.

What safety precautions should be used?

The ingredients in our proprietary cleaning powder is non-toxic and safe, but it operates at a very high temperature, so to protect from heat and steam, it is recommended that you use PPE - heat-resistant, waterproof gloves & safety goggles.. An initial set of long gauntlets and goggles are provided free of charge

What should not be cleaned in the Spectank?

Most metal items, including aluminium, can be cleaned in the Spectank®, however it is not suitable for silver, plated, coated (non stick), wood and some plastic (we will advise).

Just give us a call as soon as you realise. Our full service offering means parts and repairs are included in your monthly cost.

Why monitor frying oils?

During deep frying, fats and oils are exposed to oxygen & moisture at high temperatures, over an extended period of time. This causes a series of chemical reactions which produce harmful polar compounds in the oil, which alter the taste, texture, colour and health effects of the oil. Many national health guidelines and global health recommendations limit the amount of polar material that can be found in the oil to a maximum of 25 per cent.

Why use OleoTest?

OleoTest is a quick, user-friendly and accurate means of assessing the volume of polar material in oil, without the need for sophisticated, expensive equipment which requires calibration, user training and maintenance. The tests also keep the result for months, as evidence of your oil management

What temperature should the oil be for testing?

The oil should be in the range of 60 - 80 ℃. This is because the oil needs to melt the reagent in the test tube.

How do I ensure safety when testing with hot oil?

All packs of OleoTest are supplied with an anti-burn holder which we recommend using every time a test is performed.

How does using OilHandy reduce my costs?

Twice-daily filtering of the oil with the OilHandy will remove the crumbs, batter, food bits and other particles. Removing these particles from the oil slows down the rate of degradation, thereby ensuring your oil stays fresher and can be used for longer.

How long does it take to filter the oil using OilHandy?

OilHandy is really convenient to use, as it can be placed directly into the hot oil in the fryer. The actual filtering cycle is 5 minutes.

How much longer will the oil last before needing to be changed?

Although dependent on other factors too, consistent filtering (2 / 3 times every day) with the OilHandy typically doubles the useful life of the oil.

How does Miracle Filter Powder extend the life of frying oil?

Free-Fatty Acids (FFAs), Oxidised Fatty Acids (OFAs) and other micro-contaminants can not be removed by filtering, they are much smaller than the 5-micron size particles that filter paper will remove. Miracle Filter Powder acts like a magnet to those micro-particles, attracting and bonding to them, to form them much larger particles. Those larger particles can then be removed by normal filtering

How long before filtering should I add the Miracle Filter Powder?

Miracle Filter Powder should be added about 10 - 15 minutes before filtering. Once added, slowly mix to dissolve the Miracle Filter Powder particles and allow them to bond to the micro-particles.

Do I need to change the OilHandy filter after every cycle?

No, the disposable filters are designed for multiple uses. They generally last 4 filter cycles.

How much Miracle Filter Powder should I add to the oil?

The recommended dose is 4g per litre of oil.

Miracle Filter Powder should be used once daily, at the end of the day.

Why buy a Platescrape when we have a brilliant Kitchen Porter?

Platescrape is not designed to replace people, but to make them more efficient. Using a Platesrape will make pre-rinsing quicker, cheaper, easier and cleaner for your KP, enabling them to spend some of their time helping the chefs in other ways.

How much soap should I put in the Platescrape?

There is no set amount, but a few squirts will help break down food deposits and speed up the process.

Platescrape doesn't fit in my sink, can I still use it?

Yes absolutely. Platescrape is portable, and can be placed on a surface next to the sink or any other suitable surface in the pot wash area or other suitable surface away from food prep areas. It should NOT be used in Food prep areas.

How much water should I put in the Platescrape?

Platescrape will hold just over 20 litres of water, and it's important that water covers the brushes. There is a convenient ‘FILL LINE’ indicator on each bracket.

Can I serve food on plates immediately after being cleaned with Platescrape?

Absolutely not!! Platescrape has been designed as a pre-sanitising or pre-rinsing application only. Plates or trays should then go through your standard sanitisation process after use.

Platescrape was tested by the Food Service Technology Centre (FSTC) in California, USA. It is the leading source of energy efficiency information for the foodservice industry, and provides independent testing to encourage the commercial foodservice industry to become more sustainable.
